"table for one?"

seven plus years and I still don't want to do it-
walk into a restaurant where they seat you
and answer "one, please"
and after preparing food for a family, 
plus their friends
cooking for one is about as foreign and uncomfortable as sitting by yourself
especially at a table in a restaurant

I do cook breakfast almost everyday
2 scrambled eggs
or oatmeal
sometimes I slice fresh fruit
or nibble on raisins or craisins along with what I've cooked

my other regular meals are not complicated or labor intensive: 
a can of Progresso and a few slices of cut or cubed cheese 
plain Greek yogurt with honey and homemade granola 
fast food drive through occasionally
a can of tuna with relish or lemon pepper for seasoning 
or lunchmeat and cheese from Weaver's Market
along with a few slices of cheese or a cup of applesauce. 

sometimes though, 
I want a real home cooked meal
so I cook, for real
today I turned on the oven to bake lunch
 chicken breast and a sweet potato

I still can't cook just enough for just myself for one meal though
so this week I will be enjoying
a spinach salad with chicken 
cold chicken with a side of cottage cheese
and probably chicken and a sweet potato again.


this is what happens when I make soup: 
after taking out enough for a few days, 
I still had enough to freeze for about six more meals
and while leftovers are nice,
I'd rather cook for a table full of people and have nothing leftover
